Recently, I have been getting alot of scammy inquiries where they try to take me off the platform. Exactly what are these scams trying to accomplish if I were to engage with them off the site?

Most likely they will try to negotiate some sort of "off the platform stay" and "send you" money through a fake paypal/payment link which shows an overpayment and ask you send back the difference.

Could also be some sort of scam where they get your phone# associated with the account and spoof the # and get access to the account.

Don't even reply or entertain these scammers, they will just keep trying if you respond as you'll be noted as a "possible target".
